Get Juiced! ~ the juice with a whole head of kale in it

Green Juice with a whole head of KaleI can’t believe it’s been over a year since I’ve posted a juicing recipe. Especially for as much as I juice here at home and how much my family and love it.

So anyhoo. I’m not a huge fan of green veggies, which I’ve mention before. The kids have gotten better at some things. We all love peas that are fresh from the garden, and from the produce section. The kids, randomly, like green beans. Broccoli, eh not so much. Cabbage, yes most of the time, but not all the time. They’re goofy with their random likes and dislikes; on again, off again. So, to make sure they’re getting some good greens in their diets I juice.

This one I made, not too long ago, uses a whole head of kale. I was splitting it between myself and three kids so figured I should pack as much goodness as I could.
A couple things to note:

  • to get the maximum amount of juice out of kale I will either freeze it or lightly steam it, but I usually end up freezing it because I’m too lazy to take the time to steam it first. I want to pop it in the juicer the moment I’m ready for it.
  • kale that’s been thawed is very soft, and can jam up your juicer quickly, or at least it does mine. I find that if I do small doses of kale in between the other fruits or veggies I’m juicing, I don’t have any jamming problems.

Why is kale the ‘Queen of Greens’? One cup of chopped kale contains :

  • 684% of vitamin K
  • 206% of vitamin A
  • 134% of vitamin C
  • 9% daily calcium value
  • great source of minerals such as iron, phosphorus, and potassium

I’m probably forgetting a few key notes about kale, but you get the picture. It’s pretty potent stuff. But? I don’t like it. At. All. It’s (IMO) incredibly disgusting and I don’t care if you deep fat fried it and stuffed it in a twinkie, you’re still not going to get me to EAT it. No way! But I know how healthy it is. And, knowing that my kids aren’t big fans it’s hard for me to try and encourage something when I’ve got the same soured look on my face. Juicing is a great solution.
So here’s my latest recipe using kale.

  • 1 whole head of kale
  • 1/2 pineapple
  • 1/3 cucumber
  • 4 medium apples
  • and I also add all of my ‘scrap fruit’ to every batch of juice I make. this is just the extra cuttings I save, like strawberry tops, apple cores, etc.

Juice it all together, and wha-la! A yummy concoction full of goodness to get you through the day.

    Yum! This recipe sounds delicious – and a great idea to add your “scrap fruit” too. I wonder if I could make this in my Ninja, I don’t have a traditional juicer. Hmm…might be worth trying.

      definitely worth trying, though one of the benefits to juicing is eliminating some of the fiber, as it can be a nutrient blocker. So it’s great to do both juicing and smoothies. Let me know how it works out!

      It is actually pretty easy. I think we get wrapped up in thinking we’re ‘supposed’ to combine certain fruits with certain veggies, or whatever. I just experiment and juice what I like and what tastes good. Because if you don’t like the taste of what you’ve made, you’re likely to not do it again. Start with fruits you know are yummy and you love. Slowly sneak in some of the veggies you don’t love.
